MULLIGATAWNY SOUP (National soup of India)
An English soup with Indian origin.The name originates from Tamil word milagai (chilli) or milagu (pepper) and tanni (water). It is also known as curry soup as curry is the particular ingredient that gives this incredible soup such a delicious flavour.
Mulligatawny soup is very simple and easy to make dish. It is said that this soup used to be a hot favourite amongst the British officers when they were in India. It features a large set of ingredients spiced with an elaborate masala and hints of ginger, garlic and lemon juice. You can have it as a filling brunch or supper!

MULLIGATAWNY SOUP is a complete mixture of sweet, savoury and spicy flavours. Some soup contain rice or noodles, some are made with vegetables but traditionally it has a meat base. So, there are so many variations of Mulligatawny, it almost makes sense that it was difficult to pin down its origin.
One thing we do know it’s not strictly Indian dish due to its popularity in England during the British Raj thus we can call it as an Anglo Indian dish. So there is no single original version of this yummy soup. It was one of the few items of Indian cuisine that found common mention in the literature of the period.
Just like salad, having a bowl of soup have a lot of healthy benefits as you get to eat more veggies packed nutrients.It increases our appetite and provides a good balance of nutrients. Thus keep us firing on all cylinders. It is healthy no doubt but that’s not only the reason why soup is good.

Veg. oil-2 tsp
Diced shallots-4
Minced ginger-10gm
Minced green chilly-1
Cardamom seeds-few
Cinnamon stick-1
Turmeric powder-1/2 tsp
Cumin powder-1 tsp
Coriander powder-1 tsp
Diced red bell peppers-30 to 40 gms
Bay leaf-1
Black peppercorns-5
Red lentil soaked for an hour-100 gm
Coconut milk-1/2 cup
Juice of lime-1/2
Veg. stock-1.5 litre
Curry leaves-3 to 4
Diced apple-20 gm
Diced potato-1
Salt and pepper-as per taste
Fresh coriander leaves-2to3 sprig
Heat pan with the veg. oil, add shallots, ginger, garlic and green chillies.
Add curry leaves, all the spices, whole and powdered and cook for 3-4 minutes.
Add the soaked lentils, potato, apple, carrots and saute for 3 minutes.
Add veg. stock and tamarind pulp and simmer till all veg and lentils are cooked.
Season to taste.
Blend the soup to smooth puree.
Add the coconut milk, fresh coriander leaves and lemon juice to garnish.
Turn off the gas and serve hot!!!
